Brewing Basics 

Always Follow your Recipe Instructions



    Water

Add 1 gallon of Pre Chilled clean, chorine free water. Spring water, bottled water, filtered water but NEVER de-mineralized water to your sanitized empty glass fermenter.  Have 1-2 extra gallons on hand to top up after wort is added.

    Sanitizing the  Bucket Fermenter

Insert the spigot with the gasket on the inside and hand tighten the plastic nut. After washing the  fermenter with very mild soapy water, rinse it well. In the gallon fermenter add 1 gallon warm to hot water and One level tablespoon of the One Step Cleaner- Sanitizer*. Mix well, cover the insides of the bucket and lid of the bucket. Place into the Sanitizer  the air lock,  Into the Hydrometer Test jar with the hydrometer. Careful the hydrometer is very thin glass. Dump out the Sanitizer in the bucket and let the fermenter set upside down on clean paper towels. Carefully pour out the sanitizer ONLY in the test jar, leaving the hydrometer in the test jar for later use. Let all equipment air dry. Do not rinse. Let Sanitizer air dry only.

*NOTE: One Step has been downgraded to a Cleaner in name only.  It used to be sold as Cleaner-Sanitizer until the powers that be told the Mfg. That they had to choose or pay $$$$to get it approved as a Sanitizer..  I spoke with the Mfg. and they said  it is the same product Cleaner-Sanitizer but they had to change the name to Cleaner to avoid the $$$$.  If in doubt go online and see what others who use the Great product are saying...

6 Gallon Glass Carboy
Use either One Step Cleaner-Sanitizer as above or Star San - Both are non rinse products and work well. It's your choice.


    Yeast:

Read your packet instructions  (NOTE: Mixture temperature over 90 degrees can kill your yeast.)

   Liquid Malt Extract:

    Without opening  the jar, place jar in hot water bath for 20-30 minutes . This will soften the malt and allow it to pour easier.  Scrape if necessary to get all of the malt out of the jar. Add to Kettle/Brewpot and

   Dry Malt Extract:
  
  
Add a little at a time - Stir well until dissolved - Careful - it tends to clump and coat your face if standing too close to the kettle/brewpot.

AGAIN - FOLLOW YOUR RECIPE INSTRUCTIONS

  To Cool your Wort after brewing

Place the covered pot with the Hot Wort into a sink.  Fill the sink with 3-4 inches of cold ice water around the outside of the pot. (Adding ice to the water will speed the cooling faster). LET THE POT COOL TO TOUCH. (approx. 100 degrees)  NEVER, NEVER ADD ICE TO YOUR WORT !!!
Or use a Wort Chiller. This will cut the time down to about 15-20 mins.
